Join Chef Alli in the Showroom Kitchen in the Hy-Vee Topeka Club Room as she prepares a fantastic feast for your private group.  Most classes are team-taught by Chef Alli and Amber Groeling, the Topeka Hy-Vee Dietitian.  In each class, Chef Alli will share her favorite tips, tools and techniques and Amber will bring you the latest news in health and wellness.  Get your group together and join us soon for a fun and relaxing class!

Private Cooking Classes are approximately 1 1/2 - 2 hours and include the following:

  • Light Appetizers Upon Arrival

Life of the Paella Party

Aromatic and seasoned with saffron, traditional paella is loaded with flavors of land and sea: chicken, chorizo, clams, shrimp, vegetables.  Nearly a complete meal in itself, paella is a rich and savory meal created and served from one pan.  Yes, making paella is a procession, but it's worth the effort and Chef Alli loves to show you how.

Menu: 

  • Traditional Spanish Paella
  • Roasted Citrus Asparagus
  • And our delightful ending:  Crema Catalana!

 

Asian Inspiration

Join Chef Alli to explore a wonderful culinary trend, “fusion”.  In this class, fusion is created by blending the subtle and exotic flavors of the Far East with the traditional and familiar ingredients of the West - your taste buds will dance!

Our Fusion Menu: 

  • Mirin Seared Chicken Breasts,
  • Fusion Risotto with Baby Peas and Mushrooms
  • Green Beans with Walnuts
  • And for dessert, Mango Fools

 

Eat Right:  The Color Way!

Now That's a Spicy Meatball!
Say it with attitude because it’s great to have a dish that can serve your family several meals, and meatballs do just that.  Juicy, aromatic, and full of flavor, homemade  meatballs can do way more than simply sit atop a bowl of pasta!  This menu begins with Chef Alli’s preferred recipe for Mamma Mia Meatballs and goes on to include her fantastically fresh 30 Minute Tomato Basil Sauce, Parmesan Polenta and Magnificent Meatball Sub Sandwiches.  Come hungry – you’ll leave happy!

 

The REEL Deal:  Seafood Class

Team up with Amber and Chef Alli as they create an amazing array of healthy fish and seafood dishes. Learn how to select, cut, and cook healthy, tasty fish and seafood:  swai, salmon, cod, shrimp, scallops and more!  We will also discuss proper safety/sustainability of fresh fish and seafood.  Our menu will include Cioppino (Chef Alli’s favorite Italian Fish Stew), Slow Roasted Chipotle Salmon, and Almond-Crusted Swai with Creamy Pineapple Rice.  

 

Southwest Celebration

Join Chef Alli in the kitchen for a delightful Quesadilla Bar that includes a variety of fresh, flavorful ingredients to choose from, including caramelized onions - Chef Alli's secret quesadilla ingredient!  Creating quesadillas is an art form and Chef Alli will show you some easy techniques for success. This menu also features Chef Alli’s delicious Lasso Orzo Pasta Salad and  for dessert, Pecos Bread Pudding with Vanilla Pecan Sauce.  Come hungry!

The Cast Iron Cooker

Yes, non-stick cookware has it’s place in the kitchen, but a good, cast iron skillet is a must!  Though heavy, cast iron conducts heat perfectly and can go from stove top to oven with no problem, making it perfect for one-dish skillet meals. (yea – fewer dishes to wash!)  Join Chef Alli in the kitchen for a great class on cast iron cooking.  She’ll share her favorite cast iron pans, recipes, and stories, plus techniques for use and care of your cast iron pieces.  Menu:  The Boy Scout Skillet (yukon gold potatoes layered with leeks, chicken, and gruyere cheese, wrapped in bacon) Ina Garten's 40 Clove Garlic Chicken and Apple Skillet Cake.

 

Flavorful Asian Cooking

Join Chef Alli and Amber, the Hy-Vee Dietitian, in the Club Room Kitchen for an evening of deliciously fresh Asian “fast foods”:  Pot Stickers, Spring Rolls and Summer Rolls! You’ll have fun hand-rolling your own Summer Roll at the “creation station” before dining on Pan-Seared Pot Stickers (yummy Chinese dumplings) and Crispy Oven-Baked Spring Rolls, all served with a delicious array of dipping sauces. Created with fresh veggies, rice paper and won ton wrappers, you’ll make these Asian appetizers again and again.

Love Me Tenderloin

Chef Alli will share her special recipes, tips and techniques for cooking her favorite cut of pork – the tenderloin! This menu includes Apple Pork Tenderloin Medallions, Spiced Sweet Potato Mash, and a beautiful Skillet of Sauteed Vegetables.  For dessert, enjoy learning to make Rustic Fruit Crostatas. 

 

Sizzlin' Days of Summer

Come in the from the heat and cool off in Chef Alli's kitchen as she prepares her favorite colorful and tasty summer menu: Bacon and Arugula Tomato Marmalade Crostini, Chilled Cucumber Soup, Sweet Corn Griddle Cakes, Proschuitto-Wrapped Melon Spears with Balsamic Glaze, and for dessert: Peach Raspberry Crisp with Spiced Cream. (Yep, this class is only available from May - Sept.)

 

Comfort Foods Made Healthy

Can it be true?  Yummy, comforting dishes that taste delicious but aren't calorie laden?  REALLY?  It's true - come learn how!  Chef Alli and Amber, Hy-Vee Topeka Dietitian, will show you how to re-create some of your favorite classics:  Meatloaf, Skillet Tetrazzini, Cauliflower Potato Mash and Dried Cherry Bread Pudding.

 

Fiesta Time!

This class takes you South of the Border and features a big, flavorful batch of Salsa Fresca Chipotle with Homemade Tortilla Chips, Jalapeno Popper Dip, Baked Fideo (a delicious Mexican pasta),  Sizzlin Beef Fajitas, and for dessert, learn the art of Caramel Apple Crostatas.  Casual and fun, this class gets everybody in a party mood.
