Culinary Herbs: Compound Butters and Homemade Pesto

Have you lovingly tended your herb garden all summer and are now wondering what in the world to do with your abundance? Make great use those precious herbs in Chef Alli’s special butters and homemade pesto! Chef Alli will show you how to incorporate herb butter and pesto into a variety of dishes. We’ll also discuss which herbs are best to grow for cooking and versatility in the kitchen so you can plan now for next year’s herb garden.

Take a trip to Tuscany with Chef Alli! We’ll journey through the Italian countryside for a delicious sampling of traditional Italian dishes made from the freshest ingredients. (These recipes have been adapted for busy lives, so don’t envision days and days in the kitchen.) Our appetizer will be Prosciutto-Wrapped Melon Spears with Balsamic Drizzle. Then, we’ll move to a delightful Pan-Fried Chicken Marsala accompanied with Creamy Polenta Parmigiano and Glazed Hazelnut Carrots. For dessert, biscotti, of course!

Don’t you just love the smell of breakfast cooking first thing in the morn? Let Chef Alli teach you the essentials of breakfast: bacon, eggs and griddle cakes! These three breakfast basics stand alone, but Chef Alli’s favorite breakfast combines them into the perfect breakfast sandwich.

Back to Basics – Miles High Pies: Cream and Meringue

Join Chef Alli for another great basics class and learn the art of a pie baking! We’ll cover the basics of the pastry crust before moving on to creating your own homemade puddings, whipped cream toppings and, finally, a light and fluffy meringue.
Home-style Southwest

Join Chef Alli for another comfort food class, this time with delicious Southwest flair and flavors. The menu will include Scallop and Shrimp Ceviche for starters, then an Orange-Chipotle Pork Tenderloin Medallions with Sweet Potato Mash. For dessert, we will enjoy Almond Cookie Tacos with Spiced Fruit - YUM!

Turkey 101 – Thanksgiving at Your House?

Let Chef Alli show you how to take all the fear out of preparing Thanksgiving dinner. You’ll never have to be afraid or overwhelmed again! We’ll discuss the great technique of brining, roasting, proper use of an instant-read meat thermometer to achieve perfect ‘juiciness’, and some simple steps for easy carving and serving. In addition, Chef Alli will discuss how to prepare dressing and stuffing. Chef Alli will include recipes for her favorite Thanksgiving side dishes.
The Cast Iron Cooker

Cast iron is not what it used to be. Yes, non-stick cookware has its place in the kitchen, but a good cast iron skillet or porcelain coated cast iron is a must! Though heavy, cast iron conducts heat perfectly and can go from stove top to oven to table with no problem, making it perfect for one-dish skillet meals and leaving fewer dishes to wash! Join Chef Alli in the kitchen for a great class on cast iron cooking. She’ll share her favorite cast iron pans, recipes, and stories, plus techniques for use and care of your cast iron pieces.

New in Manhattan Lunchology 101
As you enjoy a quick light lunch in the Hy-Vee Club Room, Chef Alli and Hy-Vee Dietitian, Karen Hanson, will teach you some new cooking techniques and fun ideas for perking up your menus at home. Each session features a delicious dish for you to sample. Make it lunch out with your friends and learn something while you're here.
Cost: $7 per person. Includes lunch, beverage and class.
Time: Arrive anytime or lunch, beginning at 11:45. Teaching begins at 12:15. concludes at 12:45.
