Are you trying to bring Meatless Monday Meals to your family each week, hoping to transition to more plant-based, meatless cooking? If that’s your specific goal (and challenge!) for 2012, join Chef Alli and Amber in the Hy-Vee Kitchen for this new series of classes. In these classes, we’ll be taking traditional, familiar recipes that most of us already enjoy, transforming our favorite comfort foods by introducing less familiar ingredients (say quinoa, lentils, tabouli, soba noodles…to name just a precious few) you’ll come to know and love. Packet cooking (also known as en papillote) is a simple method of cooking that involves steaming small portions of food in parchment paper or foil. Little or no fat is added; instead, fresh herbs and seasonings infuse the vegetables, poultry or seafood that is cooked quickly and gently by this method. Imagine: salmon flavored with lemon and dill, chicken plumped with zucchini, squash and coconut-curry sauce, halibut seasoned with soy sauce and citrus……….hungry, yet? Baking Class: No-Knead Sticky Pecan Caramel Rolls

Join Chef Alli for another great baking class! This time we’re bakin’ up No-Knead Sticky Pecan Rolls using a special recipe from the cookbook Artisan Bread in 5 Minutes a Day by Jeff Hertzberg and Zoe Francois. We’ll be using their basic No-Knead Bread Recipe that allows you to store dough in the fridge for 2 weeks – how convenient! Using this method, you can have a yummy pan of Sticky Pecan Rolls within about an hour (20 minutes rest, 10 minutes to roll, and 25 minutes to bake) plus several other options from the same dough – you’re gonna love it and this method is so convenient for spontaneous cooks. Plus, the “aging” of the dough gives it a very distinct flavor that is just delicious.

The Queen of Kolache, Katherine Berkowitz, will demonstrate her technique for creating and baking these delicate Czech pastries, similar to a Danish. These tasty pastries are filled with a wide variety of sweet fruit fillings, bordered by a puffy pillow of crust. Sudia will share her tips, techniques and recipe for making homemade flour tortillas – yep, it’s PRESSING business. Bring your apron and your favorite rolling pin – this class is hands-on. No, we can’t provide a comfy chair next to the fireplace, but we can warm your bellies with a wonderful array of bold flavors, unique textures and fresh ingredients – you’ll want to create these recipes again and again! Our menu includes: Winter Panzanella Salad, Quinoa Pilaf with Sweet Potatoes, Spinach and Cranberries, and Mediterranean Pomegranate-Orange Chicken with Roasted Root Vegetables.

A professional chef with nearly 30 years of culinary experience, Ken is also an avid, passionate hunter with a zeal for preparing flavorful dishes, both simple and gourmet, from lean game meats. Ken’s goal is to help us become comfortable and confident in cleaning and preparing wild game harvested from the field. This class will feature two special recipes for venison: Stuffed Venison Roulade (leg cut) and Venison Scaloppini (backstrap). Come learn Ken’s tried-and-true secrets for succulent wild game specialties!

Many of you feel the daily pressure of getting dinner on the table. What if you could do it faster and easier? Well, come let off a little steam as you join Chef Alli and Amber in the kitchen to discover techniques that take the fear out of using a modern-day pressure cooker. You’ll learn the wonderful benefits of updated pressure cookery – Chef Alli has recently discovered it’s the perfect solution for creating fast, healthy and economical meals for her family and she’d like to show you how to do it, too. Our menu: Cherry Buffalo Wings, Rustic Orange Beef Stew, Caribbean Rice and Black Eyed-Pea Soup, Italian Chicken and Sausage with Peppers, and some veggie dishes (like Honey-Glazed Herbed Carrots, for one) so you can see how cooking vegetables under pressure leaves them bold, bright and quickly cooked to perfection. Heck, for dessert, we might even treat you to a taste of Grandma’s Spicy Applesauce….it takes 4 whole minutes to cook!
